Gott och nyttigt! - Briam - Tasty and healthy!

Now I'll give you my perfect recipe of a really appetizing and healthy Greek oven dish of vegetables, Briam!

It takes about 40 minutes to prepair (with this amount) and then little over 2 hours in the oven. I fill  a baking dish and it becomes about 6-7 portions (4-5 persons).


Zucchini, 7-8 medium sized (1 kg)
Carrots, 2 large ones, thinly sliced
Bell peppers, 2-3, different colours!
Cauliflower, 1 small (500-700 gr)
Broccoli, 1 small (600-800 gr)
Potatoes, about 1 kg cut into quite small pieces
Eggplants, 3 medium sized (about 600 gr)

(You also need some more things, see underneath.)

Rinse and clean the vegetables well.
Cut into rather big pieces (except for carrots-thin slices- and potatoes-quite small pieces)and put into a large baking dish.

Add:
1½ dl* olive oil
2 dl* water
1 can (400 g netweight) of crushed tomatoes (chopped peeled tomatoes in tomato juice)
About 2 dl* of tomato passata
Salt 2½ teaspoon, pepper 2 pinches, oregano 1½ teaspoon
Garlic, 1 pressed clove

Mix and stir. Put in the preheated oven, 200 ° (top + bottom heat rather than fan) for just over 2 hours.
Take it out a couple of times to mix and stir a little.

(*1 cup is - supposed to be - 2,36 dl)

Serve with yoghurt naturel, or Feta cheese, and fresh bread!

This also fits very good together with meat, pork fillet for example.

Mumsig kycklingrätt! - Chicken a la King!

På alla hjärtans dag fick det bli en av älsklingsrätterna till mig och mina barn! Synd bara att inte Marina var här med oss - vår äldsta dotter pluggar ju på Kreta.
Det är inte ett grekiskt recept, men jag vill gärna dela med mig eftersom det är supergott! Passar väldigt bra som bjudrätt och är uppskattat.

Du behöver:
1 kyckling i delar
1 burk (400 g) skivade champinjoner, eller färska!
1 lök
2 paprikor i olika färger
3 msk mjöl
ca 1 liter kycklingspad (silat)
(1 hönsbuljong)
2 dl creme fraiche eller matlagningsgrädde
lite tomatpuré
2 msk sherry eller brandy - Metaxa!;)
salt, vitpeppar, ev kryddnejlikor

Koka kycklingen ca 45 min (20 min med tryckkokare) med ett par tsk salt och ett par kryddnejlikor, ev även med en skivad morot och en liten lök.
Rensa kycklingen. (Kom ihåg att spara kycklingspad.)


On Valentine's Day I made one of our favourite dishes for me and my children! Sad though Marina wasn't here with us - our eldest daughter is studying on Crete.
It's not a Greek recipe, but I would like to share it with you as it's SO good!

You need:
1 chicken in pieces
1 can of sliced mushrooms (400 g), or fresh ones!
1 onion
2 bell peppers in different colours
3 tbs flour
about 1 litre of the chicken broth (strained)
(1 chicken knorr)
200 ml creme fraiche or cream
a little tomato paste
2 tbs sherry or brandy - Metaxa...;)
salt, white pepper, ev cloves

Boil the chicken for about 45 minutes (20 min with a steamer)together with a little salt and a couple of cloves, ev add a small onion and a carrot as well.
Clean (clear?) the chicken. Remember to save broth.

Stek champinjonerna i lite olja så de får fin färg, i en panna som rätten ska serveras ur förslagsvis.

Fry the mushrooms in a little oil until they get a nice colour.

Tillsätt den hackade löken och de hackade paprikorna. Fräs och stek!

Add the chopped onion and the chopped bell peppers. Fry for a while.

Pudra över 3 msk mjöl och tillsätt ca 1 liter (ev mer) silat kycklingspad, ev 1 hönsbuljong, lite tomatpuré, creme fraiche, sherry/brandy/konjak och 2 krm vitpeppar. Låt koka ett par min.
Lägg i den rensade kycklingen.






Powder 3 tbs flour and add approx. 1 litre (ev more)strained chicken broth, 1 knorr if you like, tomato paste, creme fraiche, sherry/brandy/cognac and white pepper. Let boil a couple of minutes. 
Add the chicken.



Serveras med ris och en grönsallad, varför inte en Grekisk Sallad?!

Serve with rice and a salad, why not a Greek Salad?!

Perfect recipe of Taramosaláta - fish roe salad!

Here is the recipe of "Ταραμοσαλάτα", which you need for the kiteflying picnic this Monday, Kathará Deftéra - Clean Monday! Here in Greece you only eat this fish roe salad on this particular day.

This recipe, which makes the most perfect Taramosalata, I've gotten from my dear aunt Maria at Crete (acually she is the aunt of my husband, but I also call her aunt) - a real master of the kitchen!

The most common way to eat taramosalata is like a dip to Clean Monday's special bread, "lagána".
In the supermarkets they are only selling the pink version ready (at least I have never seen the "white" one) which contains a lot of colourants and is not at all as good as the homemade!

Here in Greece they sell "taramas" in a small plastic jar of 150 g (3,50 €), so the recipe is based on this. It becomes a lot (1,4 kg!), so I'm usually giving away as well. The half is probably better...

You need:
150 g áspro taramás - "Icelandic conserved fish eggs" it says on the small plastic jar
One white bread (the whole bread , ½ kg, not just a slice) from the day before (not freshly baked)
Potatoes, 750 g
Lemons for 1½ dl lemonjuice
Olive oil, 1½ dl
- A chopper!

Soak the interior of the bread (about 250-300 g) for half an hour and leave to drain.

Boil the potatoes with the potato peel kept on, peel afterwards and mash with a fork.

First you chop the taramas together with the lemon juice  in the chopper. Then you mix bread, potatoes, taramas, olive oil and chop in stages (in the chopper) until you have a nice purée.

Garnish with an olive or slices of lemon.

Παξιμάδια and Feta-cheese

I like this commercial! The phone is ringing at the kafenío (old style Greek cafeteria) and the owner calls out for an old man, Manolis, and tells him it's his grandpa! The grandfather asks him to bring him "paximádia" - Cretan rusks.

It's written on the screen: "At Crete they live longer. Because they eat well." It's wellknown that the Cretan people are living longer because of healthy food. At an investgation from 1960 14.000 men in the age of 40-45 years from 7 different countries took part. Already then the conclusion was that the Cretans was living the most healthy. Today 40 of these 14.000 men are alive. All of them from Crete!!!

Something you often eat at Crete is "Ντάκος"(Dákos): first you make a paximádi wet under running water for a little while, as they are hard as stone! After you add tomato cut in small pieces, feta-cheese cut in cubes and oregano.

At these ones they have put capers as well, which I've never seen before though.

Apparently there are some rumours since a couple of years that unpasteurized feta can be served at restaurants and taverns in Greece and that there is the possibility to get infected by listeria-bacteria, but all Greek feta is pasteurized - it's a part of the manufacturing procedure.

My son, Babbis, told me about this funny rapper, So Tiri (Funny name, as tiri means cheese and Sotiris is a Greek name), in New York and this videoclip: "Feta kai psomi" (Feta and bread)!
